We had skirt steak…and we had lard. Instantly my mind went to grilling the skirt steak and making flour tortillas. We had all the ingredients for that. What we didn’t have was anything to go *on* the tacos.
I forged ahead with the plan anyway while I rummaged through the fridge and cabinets.
Here’s what I found and it was great:
2 grapefruit, diced, pith removed
1 cucumber, diced
1 shallot, minced
1/4 c cilantro, chopped
Tabasco, to taste
That’s it. Quickest, easiest salsa I’ve ever made and it completely elevated the dish to an actual meal and not meat on a plate.
Our 9 year old took over the tortilla making process and did a damn good job.
