Shelter in Place – Day 10 – Sourdough Waffles and “Vietnamese” Snapper and S

Continuing our trend of using sourdough starter for whatever we can, this morning brought us sourdough waffles. And many mornings after this will too because now there’s a stack in the freezer. Homemade eggos, baby.

The day was filled with work, walking (to get the hell out of the house for a while), and then cooking dinner. I picked up rockfish (basically snapper) from my CSF (community supported fishery) yesterday. I had no plan. I had fish. I had some assorted veg: red cabbage, carrots, watermelon radish, kohlrabi. I ran it through the shredder in the food processor. It looked like Easter salad. I’m sure I got the ideas for the flavors of the evening from Andrea Nguyen, I got all my Vietnamese-y dishes from her in some way. She taught me the flavor profiles.

Slaw Dressing – I didn’t measure anything at all, sorry, but I’ll guess!

Juice of 2 limes

1T fish sauce

2T soy sauce

2 T rice vinegar

1T sugar

1/4c canola oil

Taste it. Does it need more acid? Add lime or vinegar. Too sour? Add a little more sugar.

I mixed it together with the Easter slaw and added some chiffonaded (not a word) kaffir lime leaf. I let that sit to come together and the lime leaf really blossomed. It was great. I stirred in some chopped peanuts. Yummers.

While that was melding, I sliced up the snapper. I mixed some sourdough bread crumbs (surprised we have those?!) with a teaspoon of turmeric, and some salt and pepper. I breaded the fish in that and pan fried them up in oil. When they were cooked through, I kept them warm in the oven.

In the same pan the fish had been in:

Sauteed greens, shallots and ginger

2-3 shallots very thinly sliced

1-2 inch chunk of ginger, minced

1 bunch of kale (actually, i used 1/2 a bunch of kale and some kohlrabi greens)

Pile the fish and the greens on rice then eat too much. Oh, plus the slaw on the side. Eat even more.

Then listen to your husband and son play D&D with friends over Hangouts and eat a brownie while watching TV. Because we’re into week two and still in the house. My CSA box should show up tomorrow. I added tons of extras like milk, juice, kimchi. You know, the essentials. I am trying to keep things normal but things aren’t normal. I hope people are staying home. I hope people stay healthy and safe as much as possible.
